Historically, New Orleans wasn’t known for barbecue. That’s changed in the past 15 years or so, as barbecue solidified its place in the city’s cuisine and paved the way for more shops to pop up across the city. The improved scene also helped inspire the arrival of artisanal butcher shops for home cooks inspired to master their own pit at home.
Despite the outrage that erupted when a magazine recently ranked New Orleans as the best barbecue city in America, mostly directed from cities that are actually, you know, known for barbecue, the accolade was correct in one way: there are plenty of pitmasters doling out the good stuff in New Orleans.
