Despite the city’s lack of fame for it, there are plenty of delightful and surprising condiments to be found across New Orleans. From creative combinations to simply making a great condiment better at its root than anywhere else, there are many delicious partners for the variety of dippable foods New Orleans cuisine offers.

Blueberry BBQ Sauce at Piece Of Meat

This Mid City deli has been turning heads since it opened in April 2018, but the blueberry BBQ sauce is an underrated hit. It oozes over the sides of a mountain of chicken salad in the Delicate Lady sandwich, giving a sweet-and-savory boost to a wonderful rendition of a sandwich staple.

Piece of Meat isn’t the only one mixing fruits in BBQ sauce to lovely results. This sweet yet spicy barbecue sauce comes with the grilled beef cheeks. Marjie’s menu changes often, so if it’s available, get it. 

Agogo Sauce at Cowbell

With each burger at this local institution comes a rich, savory homemade ketchup and a cup of “agogo sauce,” which is a mayo mixture boosted by sambal chilis, garlic, and honey that compels you to dip everything but the straw in. The burgers — and most everything else on Cowbell’s menu — is outstanding as-is, but the agogo sauce is what the most memorable after walking out the door.

The Company Burger Condiment Bar

Sauce heaven exists, and it’s at each Company Burger location in New Orleans. After ordering food, head straight to the condiment bar, which is teeming with homemade mayo mixes, ranch, “fancy sauce,” and more. They should sell those sauces in stores.

Sweet Potato Habanero Hot Sauce at Cochon

This hot sauce can be found at most outposts in the Donald Link restaurant empire, and for good reason. Spicy yet balanced, this orange-hued sauce can be doused on anything savory. It occupies a permanent corner of our plate at Cochon Butcher, no matter what sandwich resides on it.

Spicy Butter at Maïs Arepas

Served with the Maiz de la Rueda, this supercharged butter creation should be requested with every dish. It’s that good. Don’t miss the salsa rosado, either, which is a pink sauce that is traditionally a Colombian mixture of ketchup, mayonnaise, and spices.

Creamy Cilantro Dressing at Juan's Flying Burrito

This bright and refreshing accompaniment perfectly balances most of Juan’s offerings. We get it with the Americanos tacos, but anything that has a kick to it will be enhanced by this green dream.

Firecracker Sauce at Parasol's

Parasol’s is back after an ownership change, and according to the bar’s Facebook page, the kitchen recently reopened as well. Get anything fried with the firecracker sauce on it. Akin to the famous bang bang sauce made famous by Bonefish Grill, Parasol’s rendition is better for our money, especially when it comes on an excellent fried shrimp poboy. 

Lemony White Miso Mayo at Picnic Provisions & Whiskey

You probably thought this entry would be about Picnic’s excellent Crystal hot sauce pulp — Food & Wine did call it one of its Best Bites of 2019. But no, though the pulp is delicious in its own right, the lemony miso mayo served with many of Picnic’s menu items is the star in our eyes. Savory, yet light, the sauce is a perfect foil to Picnic’s spicy crawfish boil fried chicken.

We won’t call this “creative,” but it’s the best homemade mayonnaise this city has to offer. Get it with the outstanding breakfast sandwich, which comes with a homemade turkey sausage patty, a perfectly cooked egg, cheddar cheese, and the house-made mayo served on a classic La Boulangerie croissant or English muffin.
