HISTORY — Among a few New Orleans-style barbecue shrimp recipes, the Times-Picayune points out that the famous dish originally came from the Midwest, “long considered a culinary wasteland.” The story goes that a Pascale’s Manale regular came in one night raving about a shrimp dish he had in Chicago (which isn’t really a culinary wasteland) and asked the chef to approximate it.
