Just a day after the James Beard Foundation named Nina Compton a finalist for the Best Chef: South award, Compton is racing toward tonight’s opening of her highly anticipated second restaurant, Bywater American Bistro.
She’s opening the restaurant with her husband, Larry Miller, and Levi Raines. Raines, former sous chef at Compére Lapin, was the inspiration for the second restaurant. Compton and Miller wanted to give him a “platform.”
Bywater’s “eclectic American” menu takes inspiration from the restaurant’s home in a former rice mill with plenty of heirloom, Southern grains, like farro risotto and Bellegarde Bakery’s local brown flours used for the tuna toast. Plus, there’s the pasta Compton is known for, rabbit curry, a charcuterie menu that includes foie torchon, and classic cocktails. The restaurant takes simple dishes and backs them up with lots of culinary technique.
According to OpenTable, the restaurant is already booked until next Wednesday.
