Justin Koslowsky is the new executive chef of the oyster bar in the CBD’s Ace Hotel, moving over from the hotel’s other restaurant, Italian-meets-southern Josephine Estelle, according to Nola.com.
The executive chef of Seaworthy, the Ace’s raw bar and seafood eatery, left in October to serve as head chef at the highly-anticipated brasserie Justine. The move will bring Dan Causgrove back together with his former boss and famed La Petite Grocery chef Justin Devillier.
Koslowsky helped open Josephine Estelle in 2016, eventually becoming chef de cuisine under executive chef Chris Borges, who is also the executive chef of the Ace Hotel. Before Josephine Estelle, Koslowsly was a sous chef in New York, at Michelin-starred Atera and then the cutting-edge Contra. His background helps explain his plans to expand Seaworthy’s seafood offerings to include eel, squid, and octopus.
Seaworthy also hired Brett “Shaggy” Duffee, who most recently worked alongside Susan Spicer at Rosedale, as its executive chef. Josephine Estelle has not yet announced plans for its next chef. UPDATE: Farrell Harrison is Josephine Estelle’s new Chef de Cuisine, who will work under Borges.
