A Killer New Butcher Shop & Salumeria is Heading to Mid City in 2017

A new butcher shop and eatery is heading to Mid City from the Bayou Wine Garden/Bayou Beer Garden team in collaboration with Cochon Butcher alums.

Bayou Meat Market will be headed up by ‘meat mama’ Leighann Smith (a former Eater Young Guns finalist) and Daniel Jackson, who have been popping up around town with Piece of Meat for the past year. The duo will focus on whole animal butchery, supplying meats to the Bayou Beer/Wine Garden compound, as well as offering sandwiches, charcuterie, snacks, specials and brunch in house, along with specialty items like cheese and pickles.

According to a press release, the eatery (3301 Bienville at N. Rendon) will feature glass-walled curing cabinets, and there a ‘Butcher's Bar’ where patrons can eat and/or watch butchery in process. Bayou Meat Market has applied for a liquor license, but doesn’t intend to be a late night mecca like its adjacent siblings.

This is the second major expansion from the Bayou Beer Garden team— David and Virginia Demarest, Fiona Delargy, and Dean DiSalvo— who debuted the oft-packed Bayou Wine Garden in early 2016, a spot that already serves up cheese and charcuterie and will no doubt be even more bustling after the added benefit of an in-house butcher dream team.
