A Modern French Bistro Joins Dave & Buster’s at New CBD Building

A new French bistro with a rotisserie and oyster bar Aux 3 Garçons Bistro is heading to 1200 Poydras in the CBD in early 2017, Ian McNulty reports this week. Hyatt Regency chef Eric Dadimot will bring the “simple, but true flavors” of his native Provence to the new restaurant, located on the ground floor of a six-story building that will also house a giant rooftop Dave & Buster’s arcade and eatery, next door to the Hyatt.

The bistro will seat 185 with plans for patio dining facing Loyola Avenue. The Hyatt’s bakery Pain Frais (which Dadimot started) will supply the bread. The menu will change seasonally, with chilled poached lobster, frog legs, pot au feu and duck cassoulet in the works, alongside meats cooked on the in-house rotisserie.

Dadimot will continue to run the Hyatt’s culinary operations. His biz partner/ developer Christopher Robertson owns 1200 Poydras—which also will feature 18,000-square-feet of ground floor retail and a parking garage—along with the Hyatt Regency and “other adjacent high-rises on the block.”

Aux 3 Garcons is named for Dadimot’s three sons. Expect an early 2017 opening, and likely plans for a future expansion.
