Gambit's Helen Freund takes an in-depth look at New Orleans' growing pop-up restaurant culture, which she says has graduated from a trend to become a legitimate "fixture on the local food scene". The roving restaurant model has allowed budding chefs to trial run their concepts and given eand creative options for dining out.

Of the more than 50 pop ups operating in the city, Freund's piece includes mention of several of the pop-ups that Eater featured in our rundown of best pop-ups to try right now, including the Indian-inspired Bird by Bird in the Seventh Ward and the multi chef-collab Little Bird, which sets up shop five nights a week at Barrel Proof whiskey bar. And Mid-City's Milkfish, the successful pop-up turned brick-and-mortar is also highlighted.
