Cajun Country native Jana Billiot is now the chef de cuisine at John Folse and Rick Tramonto's French Quarter stunner Restaurant R'evolution. Per Todd Price: "In high school, she worked for a seafood market, going out in the early hours on shrimp boats or to check crab traps" in her hometown of Johnson Bayou.

Billiot attended Nicholls State, studied abroad at Paul Bocuse Institute in France, and has worked as sous chef at both Tramonto's Tru in Chicago and R'evolution, where she takes over for Erik Veney as he departs for Muriel's.
Chris Lusk, the previous chef de cuisine of R'evolution, recently departed to become opening chef at Besh Group's Caribbean Room in the Pontchartrain Hotel, opening in spring.
