LAFAYETTE— Cajun Brewing is gearing up to become Lafayette's first craft brewery at "10,000 square feet with a brewing warehouse, lab, taproom and office space" opening soon. Hub City Beerworks is also planning to open in 2016. [DailyAdvertiser]

THIBODAUX— Judy Walker reports that the long-awaited $11.6 million 33,000-square-foot state-of-the-art culinary facility, The John Folse Culinary Institute, opened at Nicholls State on August 20. The facility includes pastry, butchering and seafood kitchens, ample classrooms, an extensive cookbook collection, and a "96-seat student-run restaurant,"  Bistro Ruth.
