Napoleon House's shocking switcheroo last week revealed that the French Quarter Pimm's Cup and muffuletta landmark, which has been operated for the past 100+ years by the Impastato family, is being sold to Ralph Brennan this month. While Brennan promises to keep most things as is, it's inevitable that there will be some changes. Today Ian McNulty reports that Café B chef Chris Montero is now IN as chef du cuisine. Montero is currently shadowing Sal Impastato to learn the essentials, and tells The Advocate:
"We don't intend to change a thing about what everyone knows about Napoleon House. That's what we want to preserve and carry forward."
However, McNulty reports that Montero plans to "eventually rework the menu." Napoleon House will not close for business when Brennan officially takes over around Jazz Fest, with only 'gradual' changes in store, including "building repairs and behind the scenes" changes dealing with operations and that menu update.
At Café B, Steven Marsella, executive chef of Ralph Brennan's Heritage Grill, will takeover for Montero.
