Chef Gus Martin is now IN at Dickie Brennan's palatial Quarter showboat Tableau, taking over after Ben Thibodeaux's departure back in February, Brett Anderson reports. Martin most recently helmed the kitchen at Muriel's for the past six years. He also got his start under Paul Prudhomme at Commander's Palace, and rose through the ranks of various Brennan's family restaurants including several of Dickie Brennan's and Ralph Brennan's operations.
