Last Fall, the Link Group purchased the building adjacent to Cochon Butcher at 351 Andrew Higgins Blvd. with plans to expand their annex to three times its size, and now, the time has come. Todd A. Price reports that Cochon Butcher will be closed April 20-22 to finish up the renovation, and will debut their new expansion on April 23. Butcher is already a great destination for sandwiches, all things meat, and small plates, but this is obviously a HUGE deal (and, erm, expansion) for the Link Group. While the menu should be relatively the same, here's six main changes to expect at Cochon Butcher:
· The new building next door adds 2,000 square feet.
· There will be 120 seats as opposed to the current 30.
· Current space will house retail and butcher.
· New space will have kitchen, main dining room and a new, fully stocked Swine bar.
· There will be more retail and prepared food items.
· A new vent hood means Butcher will be able to deep fry whatever they desire.
