It's been a only a week since Edgar Caro officially unveiled his newly renovated upstairs Crudo+Bar inside Uptown tapas favorite Baru (3700 Magazine), but regulars have been keeping a close eye on progress for months, watching as what used to be a second-floor apartment transformed into a chic new ceviche and cocktail lounge.
Open Tuesday-Thursday 5 to 11 p.m. and Friday-Saturday 5 p.m. to midnight, Crudo+Bar primarily focuses on a brief and well-executed menu of ceviche with charcuterie/cheeseboards available too. Drinks range from a Mojito to the almost tiki-like must-order La Isla Bonita, which is a take on a Long Island Iced Tea, but don't let that deter you as the intriguing flavor of Guarapo, a tincture made from whole can sugar and fermented pineapple skins makes this drink very special.
