Here's a video of Guy Reinbolt, executive chef at soon-to-reopen Broussard's, discussing his upcoming menu of "Louisiana-inspired French continental cuisine" along with food porn aplenty. Reinbolt, who was born and raised in France, tells the Times-Pic to expect lots of "local flavor" with French technique including various stuffed-foodstuffs like rack of lamb stuffed with crabmeat. Classical dishes (ie. foie gras, creme brulee) will also be puttin' on the ritz as Broussard's reopens officially on Friday, September 20. The menu hasn't been released to the public eye yet, but one can only imagine it's going to be as elegant as the building's $1 million revamp, so take a good look at those scallops and weep, friends.
