Here's a wild one from the before-they-were NOLA restaurateurs file: Apparently Chiba owner Keith Dusko "spent much of his 20s competing in professional Formula-1 racecar circuits," writes Ian McNulty. "In 2001, he got his first position at a Japanese restaurant in Manhattan and went on to help run a Japanese restaurant group with nine properties around New York" before opening his popular Oak Street sushi bar. 8/12 UPDATE: Dusko reports that he actually raced formula-style cars in the Barber Dodge Pro Series that is a a feeder series into the top level of IndyCar/CART, the US equivalent of F3.
