Well look at that, the brains (and owners) behind Root and upcoming Square Root, chef Philip Lopez and GM Maximilian Ortiz, are on Gambit's 2013 40 Under 40 listicle, which takes an "annual look at 40 New Orleanians who are making the city a better place." Gambit contrib Kevin Allman also uses the chance to reveal more about Square Root:
Square Root will be a chef's table restaurant, with only two seatings per night and 15 to 18 courses per dinner. Upstairs will be a craft-cocktail bar with small plates food, and Lopez says Square Root will import Root's popular charcuterie and cheese program.
Lopez also tells Allman, "You'll walk in through the kitchen and get to see how everything is made. I don't want to say it's crazy? but it's fun." Gambit is reporting an opening as early as December? with reservations being taken as at the end of this month, so a little bit different take on things than the recent City Business article.
