Going on a Kohlrabi Run with Dominique Macquet

On Tuesday, Eater joined chef Dominique Macquet of Tamarind and the soon-to-return Dominique's on Magazine on a trip to the Crescent City Farmer's Market in Uptown Square. The purpose: 30 pounds of kohlrabi from Timmy Perilloux of Montz, Louisiana. Though Macquet and his wife Wendy?who serves as the marketing director for Dominique's on Magazine?go twice a week, the appearance of his daughter Nadya was rarer. She was supposed to go the camp that day (notice the shirt), but was able to talk her way into skipping that for a trip to the market.

What's Macquet doing with all that kohlrabi? Pickling it, for one, for Tamarind's banh mi options, and turning it into a slaw for other dishes.
