A little over a month after parting ways with opening chef Chris Cody, Dijon still hasn't found a permanent chef. But to help oversee the kitchen, the Lower Garden District restaurant is bringing on Ryan Hughes as a consultant, owner Kurt Brodtmann announced via a press release this afternoon. Hughes was most recently at Johnny V's, getting replaced over the Fourth of July holiday.
Hughes is opening Purloo in the new location of the Southern Food & Beverage Museum, which he expects to open in February. Meanwhile, the hunt for a permanent chef at Dijon continues.
