SoBou opened earlier this week, as a drinks-heavy concept from the Commander's Palace team. Between the connection to Commander's, the Louisiana-inspired fare by chef Juan Carlos Gonzalez and the emphasis on beer, wine and craft cocktails, they're calling it a Creole Saloon.
