Keith Dusko is one-half of the ownership team at Chiba, the ambitious new sushi restaurant on Oak Street. A New Jersey native ("I'm originally from New Jersey, so I love pizza"), Dusko spent years working in sushi in New York City, where a person can't walk 10 feet without passing a pizzeria. His favorite in New Orleans is the Gulf Coast's regional chain Rotolo's, which has locations on Chartres and Rampart streets: "It's probably the closest thing to New York pizza I can get here." What's his favorite back in New York? "Far and away my favorite is Little Italy Pizza at 43rd and Madison." But when talking about pizzerias in New Orleans, New York or anywhere else for that matter, Dusko understands people are going to disagree. "That's the thing about taste, though, right?"
