Dominique Macquet's Tamarind is all about exploring the "colonial legacy shared by two of France's very different former holdings," Vietnam and Louisiana, writes Ian McNulty in this week's Gambit. And McNulty seems to be pretty pleased with the restaurant in the Hotel Modern, even if "there is plenty more room to explore." [Gambit]
