Last night, chef and restaurateur Frank Brigtsen was awarded the Lafcadio Hearn Award from the John Folse Culinary Institute at Nicholls State University. Here's Brigtsen on that culinary program: "So many young chefs these days are bombarded with everything they see on TV, with celebrity chefs and cooking shows and all of those flashy things, but here students learn about the humbler side, which is just making people happy."
