Suis Generis, the new, eclectic restaurant in the Bywater, has a constantly changing menu that comes, in part, from the fact that they utilize a number of different chefs. Co-owner Ernest Foundas told NoDef,"The foundation of our idea was to essentially be like musicians" playing gigs with other musicians. While a lot of chefs "have attitude" and won't collaborate in that way, "the chefs that don’t come in and do guest nights. We have a core of about four chefs." [NoDef]
