Brett Anderson from Times-Pic has more on SoBou, the drinks-focused spot that will soon be taking over the former Bacco space in the French Quarter W Hotel. Anderson spoke to Commander's Palace owner Ti Martin, who described it as a "drinks-focused restaurant" that the Commander's team has been thinking about for some time now. Most of the details that Martin provides are the same as what Commander's chef Tory McPhail told Eater last week, though some more does come out:
While Commander’s chef Tory McPhail will be among a handful of Commander’s veterans who’ll serve as a partner in SoBou, he will not be the new restaurant’s chef. That job is going to Juan Carlos Gonzalez, a veteran of several Commander’s family restaurants, including Bistro Alex in Houston.Gonzalez apprenticed with Eric Ripert at Le Bernardin before heading south to join the Commander's Palace family.
Martin also gives some additional notes on the menu, which she describes as "Louisiana street food inspired" and which will include items like "crispy boudin, duck debris and butternut squash beignets, shrimp-and-tasso pinchos and a suckling pig Cuban po-boy."
