Chef Dominique Macquet is giving a preview of the new Dominique's on Magazine menu in... Thibodaux? Yes, dawlin, in Thibodaux. The dinner is Saturday, November 17, at a restaurant called The Foundry on the bayou. Not that surprising, because the Foundry is actually owned by Macquet's business partner, Mike Schexnayder (who also owns Le Foret).
So what's in store for Dominique's menu? Lots of local everything, and for the dinner itself, Macquet will "showcase" local items from around Bayou Lafourche. Here is a peek at what you can expect:
Louisiana shrimp and celery root salad with shaved
fennel, local aruguila and basil aioli, followed by baked Louisiana oysters with Gruyere cheese, rutabaga and andouille. The main course is grilled Morgan Ranch Kobe beef with Creole cream cheese stuffing, a gratin of potatoes, crispy watercress salad and red wine jus. And the dessert is homemade local goat's milk cheesecake with toasted pecans and Thibodaux honey.
The dinner (7:30p.m on Nov. 17) has limited seating, and costs $65/person. The Foundry is located at 715 West 1st Street in Thibodaux. For reservations, call 985-387-4070.
