FRENCH QUARTER? Galatoire's will be holding a "Super Bowl Party with a Purpose," Taste of the NFL Dinner on Monday, October 15 at 7 p.m. to benefit Second Harvest Food Bank. The menu will feature four courses of Galatoire's signature cuisine. MANDEVILLE? Café Lynn's Chef Joey Najolia's on the preparation for his braised spare rib lasagna: "It's a lot of work. It's very time consuming; it's a pain. But most things that take time and effort generally do taste better." They braise the short ribs on the bone for 2 1/2 to 3 hours, and make their own ricotta cheese and pasta.
