BTG, the wine bar pop up at The Company Burger returns tonight. BTG, which stands for "By The Glass," is a concept dreamed up by Company Burger owner Adam Biderman and Joe Briand of Cartes des Vins, where Briand brings basically whatever wines he feels like serving and talking about and Biderman cooks up whatever he feels like making
Eater got a sneak peak at tonight's menu, and the focus is very much on the wine part of the concept, with wines available mostly in the $5-$9 range. For the first iteration, Biderman said he wasn't necessarily pairing food with the wines, though he was trying to hit "certain notes" that would make sense. For tonight's pop up, he's going with items ranging from sliders (it's still a burger joint after all) to steak tartare, pork belly and pan roasted sweet breads. Going back to those upscale roots and what not.
The pop up starts at 7PM tonight. Cash only, with a service industry discount.
