Oysters and oyster dressing are important parts of the typical New Orleans holiday menu, and unlike last holiday season, local bivalves are pretty plentiful this year. The oysters in this year's harvest (is that the right word for oysters?) are "fat, salty and beautiful right now," but they're still not cheap. And as the Times-Pic's Judy Walker reports, in more worrisome news, "the next couple of years are going to be challenging for the oyster industry in Louisiana" because of a lack of baby oysters. [TP]
